Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 onion (diced)
- 6 cloves garlic (minced)
- 2 cans corn kernels (drained)
- 1 can Rotel tomatoes with green chiles
- 1/3 cup sour cream
- 1 container plain Greek yogurt
- Cilantro for garnish
- Cotija cheese for garnish
- Tajin seasoning
- Chili powder
- Kosher salt
- Pepper
- Jalapenos (optional)
- Crushed Fritos or tortilla chips (optional)
Instructions
- Place chicken, onions, and garlic in the slow cooker. Season with Tajin, chili powder, salt, and pepper. Cook on low for 6 hours.
- After 6 hours, add corn, Rotel tomatoes, sour cream, Greek yogurt, cilantro, and additional salt and pepper if desired. Cook on low for an additional 1 to 2 hours.
- Before serving, garnish with more Tajin, cilantro, and cotija cheese. Enjoy with optional toppings like jalapeños or tortilla chips.
