  • 20 oz refrigerated cheese tortellini
  • 8 oz beef roast (cubed)
  • 8 oz honey glazed chicken (cubed)
  • 4 oz turkey slices (cubed)
  • 6 oz Swiss cheese (cubed)
  • 1 pint cherry tomatoes (halved)
  • 2/3 cup chopped dill pickles
  • 3 tablespoons chopped pickled jalapeños
  • 1/4 of a small red onion (thinly sliced)
  • 2 cups packed roughly chopped romaine lettuce
  • 2 tablespoons chopped cilantro
  • 2/3 cup olive oil or canola oil
  • 6 cloves garlic (minced)
  • 3 tablespoons orange juice
  • 1 tablespoon orange zest
  • Juice and zest of one lime
  • Juice and zest of one lemon
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp smoked paprika
  • 1/4 tsp pepper
  • 1 tablespoon apple cider vinegar (optional for tangier dressing)

Instructions

  1. Cook the tortellini until al dente according to package directions. Drain and rinse under cold water.
  2. In a mason jar, combine olive oil, garlic, citrus juices and zest, dried oregano, ground cumin, onion powder, salt, smoked paprika, and pepper. Shake well to mix.
  3. In a large serving bowl, toss the cooked tortellini with half of the dressing. Add the beef, chicken, turkey, Swiss cheese, cherry tomatoes, pickles, jalapeños, and red onion; toss well to combine.
  4. Chill in the refrigerator for at least one hour before serving.
  5. Just before serving, add chopped romaine lettuce and drizzle with remaining dressing; toss gently.
