  • 1 cup Dr. Pepper soda
  • 1 cup unsalted butter (room temperature)
  • ¼ cup cocoa powder
  • ½ cup boiling water
  • ½ cup buttermilk
  • 3 large eggs (room temperature)
  • 2 cups all-purpose flour
  • 1⅓ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ½ teaspoon all spice

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking pan.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking soda, nutmeg, ginger, all spice, and sugar until well combined.
  3. In another bowl, mix chopped prunes, dried cherries, buttermilk, eggs, vanilla extract, and Dr. Pepper until blended.
  4. Gradually combine the wet mixture into the dry ingredients using an electric mixer on low speed. Slowly add boiling water until just mixed.
  5. Pour the batter into the prepared pan and bake for approximately 34 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool completely on a wire rack before frosting with your desired icing made from buttercream mixed with remaining Dr. Pepper.
