Ingredients
- 1 lb uncooked elbow macaroni
- 4 cups cubed chicken
- 28 ounces pineapple chunks (drained)
- 2 red peppers (chopped)
- 2 carrots (matchsticks)
- 4 green onions (sliced)
- 1 cup mayonnaise
- 4 tablespoons sour cream
- 1/2 cup pineapple juice
- 1 tablespoon whole grain mustard
- 2 tablespoons apple cider vinegar
- 1 – 2 teaspoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water; toss with olive oil.
- While the pasta cools, chop the vegetables and drain the pineapple, reserving juice.
- In a bowl, mix mayonnaise, sour cream, pineapple juice, mustard, vinegar, salt, and pepper for the dressing.
- Combine cooled pasta, chicken, vegetables, and pineapple in a large bowl; pour dressing over and toss gently.
- Chill in the refrigerator for at least one hour before serving.
