  • 4 cups cubed chicken
  • 28 ounces pineapple chunks (drained)
  • 2 red peppers (chopped)
  • 2 carrots (matchsticks)
  • 4 green onions (sliced)
  • 1 cup mayonnaise
  • 4 tablespoons sour cream
  • 1/2 cup pineapple juice
  • 1 tablespoon whole grain mustard
  • 2 tablespoons apple cider vinegar
  • 12 teaspoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water; toss with olive oil.
  2. While the pasta cools, chop the vegetables and drain the pineapple, reserving juice.
  3. In a bowl, mix mayonnaise, sour cream, pineapple juice, mustard, vinegar, salt, and pepper for the dressing.
  4. Combine cooled pasta, chicken, vegetables, and pineapple in a large bowl; pour dressing over and toss gently.
  5. Chill in the refrigerator for at least one hour before serving.
