Ingredients
- 1 onion, diced
- 3 garlic cloves, minced
- 2 celery stalks, chopped
- 1 can (28 oz) whole peeled tomatoes
- 1 ½ cups chicken bone broth
- 2 tbsp light brown sugar
- 1 sprig thyme, fresh
- ½ cup heavy cream
- 10 oz ravioli
- Fresh basil for garnish
Instructions
- Heat a large pot over medium heat. Optionally add olive oil.
- Sauté the diced onion until translucent, then add garlic and celery; cook until fragrant.
- Pour in the whole peeled tomatoes and their juices along with chicken bone broth. Stir in brown sugar and thyme sprig; bring to a simmer.
- Simmer for about 20 minutes, seasoning with salt and pepper to taste. Remove the thyme sprig before adding cream.
- Cook ravioli in boiling water until they float (4-5 minutes), drain, and add directly to the soup.
- Stir in heavy cream, heat through without boiling, and serve hot garnished with fresh basil.
