Ingredients
- 2 1/4 cups flour
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 cup milk
- 3 eggs
- 6 tablespoons vegetable oil
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 1/2 cup fresh cranberries
- 1 tablespoon orange zest
- 2 tablespoons orange juice
- 1/8 teaspoon nutmeg
- 1 tablespoon vanilla extract (alcohol-free)
- 1/4 cup sliced almonds
- 1/2 cup chopped maraschino cherries
- 2 tablespoons maraschino cherry juice
- 1/2 teaspoon baking soda
- 1/4 cup chopped pecans
- 1/2 cup mashed overripe banana
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the flour, salt, and baking powder.
- In a separate small bowl, whisk together the milk, eggs, and vegetable oil until well combined.
- Add the milk mixture along with both sugars to the flour mixture. Stir gently just until combined; avoid overmixing as this may result in tough bread.
- To make Cranberry Orange Loaf, pour 3/4 to 1 cup of base batter into a large Pyrex measuring cup. Stir in cranberries, orange zest, and orange juice. Mix gently and pour into three slots of the mini loaf pan.
- Rinse out the measuring cup thoroughly, pour another batch of base batter into it, and add eggnog, nutmeg, and vanilla extract. Mix gently and pour into three slots of the mini loaf pan.
- Rinse out the measuring cup again, pour another batch of base batter into it, and add sliced almonds, maraschino cherries, and maraschino cherry juice. Mix gently and fill three slots in the mini loaf pan.
- Rinse out the measuring cup once more, pour another batch of base batter into it, and stir in baking soda, vanilla extract, chopped pecans, and mashed banana. Mix gently and fill up three slots of the mini loaf pan.
- Place your mini loaf pan in the oven and bake for about 25-28 minutes or until golden brown on top. Once done, cool them in the pan for about 10 minutes before carefully removing them from their molds. Allow them to cool completely before serving.
