Ingredients
- 9 oz fresh cheese tortellini
- 1 green bell pepper
- 1 red bell pepper
- 1 cup corn (steamed or canned)
- 1 heaping cup grape/cherry tomatoes
- 4 oz cheddar cheese (cubed)
- 1/2 cup extra virgin olive oil
- 1/2 cup white apple vinegar
- 2 TBSP Italian seasoning blend
- 1/2 TBSP garlic powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Cook tortellini in a large pot according to package instructions until al dente. Drain and rinse with cold water.
- In a bowl, whisk together olive oil, vinegar, Italian seasoning, garlic powder, salt, and pepper to create the dressing.
- Chop bell peppers and prepare corn.
- In a mixing bowl, combine cooked tortellini, vegetables, cubed cheese, and half of the dressing. Mix well.
- Chill for at least 30 minutes in the refrigerator before serving. Drizzle remaining dressing on top before serving.
