  • 9 oz fresh cheese tortellini
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 cup corn (steamed or canned)
  • 1 heaping cup grape/cherry tomatoes
  • 4 oz cheddar cheese (cubed)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup white apple vinegar
  • 2 TBSP Italian seasoning blend
  • 1/2 TBSP garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Cook tortellini in a large pot according to package instructions until al dente. Drain and rinse with cold water.
  2. In a bowl, whisk together olive oil, vinegar, Italian seasoning, garlic powder, salt, and pepper to create the dressing.
  3. Chop bell peppers and prepare corn.
  4. In a mixing bowl, combine cooked tortellini, vegetables, cubed cheese, and half of the dressing. Mix well.
  5. Chill for at least 30 minutes in the refrigerator before serving. Drizzle remaining dressing on top before serving.
