  • 1 lb ground beef or lentils/mushrooms for a vegetarian option
  • 1 cup short grain or Arborio rice (soaked)
  • 2 cloves garlic (minced)
  • 1 cup grated tomato
  • Fresh parsley (chopped)
  • Fresh mint (chopped)
  • Tomato sauce (made from canned tomatoes and water)

Instructions

  1. Prepare the onions by trimming tops and bottoms. Boil in salted water for 10-15 minutes until tender yet firm. Cool before handling.
  2. In a blender, mix canned tomatoes, water, tomato paste, lemon juice, salt, and pepper to create a smooth sauce.
  3. Sauté diced onions and minced garlic in olive oil until fragrant. Add ground beef (or substitute), cook until browned, then mix in grated tomato, soaked rice, lemon juice, herbs, and spices. Simmer for 8-10 minutes.
  4. Carefully separate onion layers and fill each with the rice mixture. Roll tightly to secure filling.
  5. Preheat oven to 425°F (220°C). Spread sauce in a baking dish, arrange stuffed onions on top, cover with foil, and bake for 30 minutes. Remove foil and bake an additional 25-30 minutes until golden brown.
