  • 4 large bell peppers (red, yellow, or green)
  • 1 cup cooked rice
  • 1/2 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1 cup diced tomatoes
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon dried oregano
  • 1/2 cup vegetable broth or water

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, add olive oil and sauté onion until soft (3-5 minutes). Add garlic; cook for another minute.
  4. Stir in diced tomatoes and cooked rice along with parsley, dill, oregano, salt, and pepper; cook for 3-4 minutes.
  5. Remove from heat and fold in crumbled feta cheese.
  6. Stuff each bell pepper with the rice mixture.
  7. Place stuffed peppers upright in a baking dish; pour vegetable broth or water around them.
  8. Cover with foil and bake for about 35 minutes.
  9. Remove foil and bake an additional 10-15 minutes until tender.
