Ingredients
- 20 ounces fresh cheese tortellini
- 1.5 cups cherry tomatoes, halved
- 1.5 cups cucumbers, chopped
- 1 cup canned artichoke hearts, chopped
- 1 can olives, sliced
- 1/2 red onion, sliced
- 1 cup crumbled Feta cheese
- 1/2 cup olive oil
- 1/3 cup red apple vinegar
- 3–4 tablespoons white sugar
- 2 teaspoons Dijon mustard
- 3 teaspoons minced garlic
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 1 teaspoon salt
- Juice of 1 lemon
- Pinch of red pepper (optional)
Instructions
- Cook the tortellini according to package directions until al dente. Drain and set aside.
- In a small bowl, whisk together olive oil, red apple vinegar, sugar, Dijon mustard, minced garlic, oregano, basil, salt, lemon juice, and optional red pepper until combined.
- In a large mixing bowl, combine cooked tortellini with cherry tomatoes, cucumbers, artichokes, olives, red onion, and half of the feta cheese.
- Pour the dressing over the salad mixture and toss gently until evenly coated.
- Sprinkle remaining feta cheese and chopped dill on top before covering and chilling in the refrigerator for at least 2 hours before serving to enhance flavors.
