  • 1 lb ribeye or sirloin steak
  • 1 cup cherry tomatoes
  • 8 oz fresh mozzarella balls (bocconcini)
  • 1/2 cup fresh basil leaves
  • 1/3 cup balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the steak generously with salt and pepper on both sides.
  2. Heat a cast iron skillet over medium-high heat and add 1 tablespoon of olive oil. Sear the steak for 4–5 minutes on each side until cooked to your liking. Let it rest for 5–10 minutes before slicing.
  3. In the same skillet, add cherry tomatoes with another tablespoon of olive oil. Cook until blistered and softened.
  4. In a small saucepan, simmer balsamic vinegar over medium heat until reduced by half and syrupy in consistency.
  5. Slice the rested steak thinly and arrange on a platter topped with roasted tomatoes and mozzarella balls.
  6. Scatter fresh basil leaves over the top and drizzle with the balsamic glaze before serving.
