  • 23 boneless, skinless chicken breasts
  • 4 cups uncooked pasta
  • 1 cup smoked cheddar cheese, grated
  • 1 avocado, chopped
  • Handful of cilantro, chopped
  • 1/4 medium red onion, chopped
  • 1/4 cup olive oil
  • Juice from 1/2 lemon
  • 2 dashes Italian seasoning
  • 2 cloves garlic, minced
  • Salt & pepper to taste
  • 1/3 cup plain Greek yogurt
  • 1 tablespoon BBQ sauce
  • 1/2 tablespoon vinegar
  • 1/2 tablespoon brown sugar
  • Pinch of garlic powder

Instructions

  1. Marinate chicken breasts in BBQ sauce for at least 30 minutes.
  2. Prepare the dressing by mixing Greek yogurt, olive oil, lemon juice, Italian seasoning, garlic, BBQ sauce, vinegar, brown sugar, salt, and pepper.
  3. Cook pasta according to package directions; drain and cool.
  4. Grill marinated chicken until fully cooked; slice into strips.
  5. In a large bowl, combine cooled pasta with veggies and dressing. Toss until well coated.
  6. Top with sliced grilled chicken before serving.
