Description

  • 1 box Strawberry Cake Mix
  • 1 cup Guava Nectar or Juice
  • 3 large Eggs (room temperature)
  • 1/2 cup Coconut Oil (melted)
  • 8 oz Cream Cheese (room temperature)
  • 2 1/2 cups Guava Nectar or Juice (for glaze)
  • 8 oz Cool Whip (thawed)
  • 1 cup Sweetened Coconut Flakes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine Strawberry Cake Mix, Guava Nectar, Eggs, Coconut Oil, Cream Cheese, Granulated Sugar, and Vanilla Extract. Mix until smooth.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for about 30 minutes or until a toothpick comes out clean.
  4. For the glaze, simmer Guava Nectar and Granulated Sugar in a saucepan. Mix Cornstarch with Water to create a slurry; add it to the simmering mixture until thickened.
  5. Once the cake cools, poke holes in the top and pour the glaze over it.
  6. Spread Cool Whip on top and sprinkle with Sweetened Coconut Flakes before serving.
