  • 1/4 cup agave nectar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 large ripe bananas (mashed)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 6 ounces Vanilla Greek yogurt
  • 1/2 cup mini semi-sweet chocolate morsels

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cupcake tin with nonstick baking spray.
  2. In a large mixing bowl, combine honey, agave nectar, egg, vanilla extract, and mashed bananas. Mix until smooth.
  3. Add both flours, baking powder, baking soda, salt, and Greek yogurt to the banana mixture. Beat for about 1-2 minutes until combined.
  4. Gently fold in the mini chocolate morsels.
  5. Spoon about 1/4 cup of batter into each muffin cup and bake for 18–20 minutes or until a toothpick inserted comes out clean.
  6. Cool on a wire rack before serving.
