  • 1 tablespoon barley malt syrup or light brown sugar
  • 1 1/2 cups (355 grams) warm water (about 110°F), (divided)
  • 5 cups (635 grams) all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 2 tablespoons (40 grams) food grade lye
  • 1 liter (1000 grams) water, room temperature
  • Pretzel salt or coarse salt

Instructions

  1. Preheat your oven to 400°F and line two baking sheets with parchment paper.
  2. In a mixing bowl, combine warm water and yeast; let sit until frothy.
  3. Stir in barley malt syrup or brown sugar, then gradually add flour and salt until dough forms.
  4. Knead on a floured surface for about 5-7 minutes until smooth.
  5. Divide the dough into equal pieces (about 10) and roll each into a long rope. Shape into pretzels by crossing and twisting the ends before folding them back down.
  6. Prepare the lye bath by carefully mixing food grade lye with room temperature water.
  7. Dip each pretzel into the lye solution for about 30 seconds before placing them on prepared baking sheets.
  8. Sprinkle pretzel salt on top and bake for about 16 minutes until golden brown.
