Ingredients
- 14 oz rotini or penne pasta
- 1 large cucumber
- 18 oz cherry tomatoes
- 3/4 cup sliced kalamata olives
- 5 oz feta cheese
- 1/2 red onion
- 1/4 cup fresh parsley
- 1/3 cup olive oil
- 4 tbsp red apple vinegar
- 1 tbsp lemon juice
- 2 tsp oregano
- 1 tsp honey
- 3 garlic cloves
- 1/4 tsp pepper
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
Instructions
- Cook pasta in boiling water until al dente; drain and rinse with cold water.
- Chop cucumber into half-moons, halve cherry tomatoes, slice red onion thinly, and chop parsley.
- In a mixing bowl, whisk together olive oil, vinegar, lemon juice, oregano, honey, garlic, pepper, salt, and red pepper flakes.
- In a large bowl, combine cooked pasta with cucumber, tomatoes, olives, feta cheese, onion, and parsley. Pour dressing over and toss gently.
- Cover and chill in the fridge for at least one hour before serving.
