  • 1 3/4 cup almond flour
  • 1/2 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3 egg yolks
  • 1 teaspoon vanilla
  • 12 tablespoons unsalted butter, softened
  • 1 cup erythritol
  • 1/2 cup golden monk fruit or Swerve
  • 1/2 teaspoon molasses extract
  • 1/2 cup buttermilk or plain yogurt
  • 5 tablespoons unsalted butter, softened
  • 1 1/4 cup powdered erythritol
  • 8 ounces cream cheese, softened
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon of reserved spice mixture

Instructions

  1. Preheat the oven to 350°F and prepare three 6-inch cake pans with grease and parchment paper.
  2. In a bowl, combine cinnamon, cardamom, allspice, cloves, nutmeg, and ginger; set aside some spice mixture for the frosting.
  3. Brown butter in a skillet and mix in the spice blend; let cool.
  4. Whisk together almond flour, coconut flour, baking powder, baking soda, and salt in another bowl.
  5. In a separate bowl, beat eggs and vanilla until blended.
  6. Combine softened butter with erythritol and golden monk fruit; mix in cooled buttery spice mixture and egg mixture.
  7. Gradually add dry ingredients into wet ingredients; stir in buttermilk or yogurt until smooth.
  8. Pour batter into prepared pans and bake for 25-30 minutes or until done; cool on wire racks.
  9. For frosting, beat all frosting ingredients together until smooth; frost cooled cakes generously.
