  • 1.5 litres water
  • 3.25 cups granulated sugar

Instructions

  1. Wash and dry the lemons thoroughly.
  2. Peel the lemons using a vegetable peeler, avoiding excess pith.
  3. Place the lemon peels in a large glass jar and pour the water over them.
  4. Seal the jar and store it in a cool, dark place for 30 days, shaking gently every few days.
  5. After 30 days, prepare simple syrup by dissolving sugar in warm water; let it cool completely.
  6. Strain the infused mixture through a sieve lined with a coffee filter into a bowl.
  7. Mix the cooled simple syrup with the infused mixture until combined.
  8. Transfer to bottles using a funnel and let rest for another 30 days before serving.
