- 1 medium egg (beaten)
- 1/2 cup (120g) water
- 2 tablespoons extra virgin olive oil
- 8 ounces lean ground beef or lamb
- 1 onion (grated or very finely chopped)
- 2 to 3 garlic cloves (minced or grated)
- Sea salt (to taste)
- Freshly ground black pepper
- 16 ounces plain whole milk yogurt (thick and creamy Turkish or Greek yogurt preferred)
- 1/4 cup extra virgin olive oil
- 1 tablespoon Turkish red pepper paste (or double concentrated tomato paste)
- 1 teaspoon Aleppo pepper
- 2 teaspoons dried mint (plus more for serving)
- 1 teaspoon sumac (plus more for serving)
Instructions
- Prepare the dough by mixing flour and salt, then adding beaten egg, water, and olive oil. Knead until smooth and let rest for 30 minutes.
- For the filling, combine ground beef or lamb with grated onion, minced garlic, salt, and pepper.
- Roll out the dough thinly and cut into squares; place a spoonful of filling in each square, fold into triangles, and seal the edges.
- Boil dumplings in salted water until they float (about 5-7 minutes).
- Mix yogurt with minced garlic and salt for the sauce.
- Prepare spiced oil by heating olive oil with red pepper paste, Aleppo pepper, dried mint, and sumac.
- Serve manti topped with garlicky yogurt sauce and drizzled with spiced oil.
