  • 2 whole Branzino fillets
  • 2 tablespoons olive oil
  • 1 orange (zested)
  • 1 shallot (finely chopped)
  • 2 green onions (finely chopped)
  • 1/4 cup chives (finely chopped)
  • 1 1/2 cups cherry tomatoes (quartered)
  • 1/3 cup black olives (halved)
  • 2 tablespoons capers
  • 1/2 cup basil (finely chopped)
  • 3 tablespoons roasted pine nuts
  • 3/4 cup extra virgin olive oil
  • 1 lemon (juiced)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the Branzino by trimming edges and making four diagonal incisions on each fillet's skin.
  3. Drizzle olive oil on a baking sheet and place fillets skin-side down; season with remaining olive oil and salt.
  4. Bake for about 10 minutes or until fish is opaque.
  5. While fish bakes, mix shallots, green onions, chives, cherry tomatoes, olives, capers, basil, and pine nuts in a bowl. Add olive oil and mix well.
  6. Zest and juice lemon into the sauce mixture; stir and set aside.
  7. Once cooked, serve fillets topped with orange zest and spoon Vierge sauce over each.
