  • 2 cups all-purpose flour
  • 1 tbsp cocoa powder
  • 1 large egg
  • ½ cup buttermilk
  • 1 cup light brown sugar
  • ½ tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup powdered sugar
  • 1 cup vegan marshmallows fluff
  • ½ cup butter (softened)
  • ½ tsp vanilla extract
  • Gel food colors (red & blue)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together room temperature butter and light brown sugar until fluffy.
  3. Add egg, vanilla extract, and buttermilk; whisk until well combined.
  4. In another bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Divide batter into two bowls; color one red and the other blue using gel food colors.
  7. Chill dough for 10 minutes in the refrigerator.
  8. On a parchment-lined baking tray, scoop out dough using alternating colors for each cookie.
  9. Bake for 8-10 minutes until cookies spring back when touched.
  10. Cool on a wire rack before filling with the prepared vegan marshmallows fluff.
