  • 6 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 11/2 cups powdered sugar
  • 1/21 tablespoon 2% or skim milk
  • 1 teaspoon vanilla extract
  • 11/2 cups fresh blueberries
  • 11/2 cups fresh strawberries, diced into 1/4-in cubes

Instructions

  1. In a mixing bowl, beat together the softened butter and granulated sugar until creamy. Add in the egg and vanilla extract; mix until well combined.
  2. In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add this dry mixture into the wet mixture until fully incorporated.
  3. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoon-sized balls of dough onto the prepared sheet. Bake for approximately 10 minutes or until edges are lightly golden. Once baked, remove from the oven and allow them to cool on a cooling rack.
  4. While the cookies cool, prepare your frosting. In a mixing bowl, mix together the softened cream cheese and butter until smooth. Gradually add in powdered sugar while mixing. Adjust consistency with milk as needed. Stir in vanilla extract.
  5. Spread a generous layer of cream cheese frosting on each cooled cookie. Top with fresh blueberries and diced strawberries artistically arranged for that perfect festive look.
