  • 4 boneless skinless chicken breasts
  • 1 envelope taco seasoning
  • 1 small onion (chopped)
  • 1 can tomato sauce (8 ounces)
  • 1 can black beans (15 ounces, drained and rinsed)
  • 1 can chili beans (15 ounces)
  • 1 can Mexicorn (15 ounces)
  • 2 cans tomatoes with green chiles (10 ounces each)

Instructions

  1. Dice the onion finely and rinse the black beans under cool water.
  2. Place the chicken breasts at the bottom of the slow cooker and sprinkle taco seasoning over them.
  3. Add the chopped onion, tomato sauce, rinsed black beans, undrained chili beans, Mexicorn, and tomatoes with green chiles to the slow cooker. Stir to combine.
  4. Cover and cook on low for 6 hours or high for 4 hours.
  5. Once cooked, remove chicken breasts, shred them with two forks, and return to the soup. Stir well before serving.
