  • 23 lbs chicken breasts, cut into pieces
  • 1/3 cup vegetable oil (for brushing)
  • 2 cups milk
  • 2 tbsp Sriracha sauce
  • 2 tsp salt
  • 2 tsp sugar
  • 1 egg
  • 1.5 cups flour
  • 2 tsp BBQ rub
  • 1.5 tsp onion powder
  • 1.5 tsp garlic powder

Instructions

  1. Mix milk and Sriracha sauce in a bowl to create the marinade.
  2. Marinate chicken pieces in the mixture for at least one hour in the refrigerator.
  3. In another bowl, whisk together flour, salt, sugar, BBQ rub, onion powder, and garlic powder.
  4. Coat marinated chicken pieces in the seasoned flour mixture.
  5. Preheat smoker and brush each piece with vegetable oil before placing them on smoker racks.
  6. Smoke chicken for about one hour until internal temperature reaches at least 165°F (75°C).
  7. Allow resting briefly before serving.
