  • 1 large whole egg, at room temperature
  • 2/3 cup whole milk, at room temperature
  • 3-ounce package strawberry flavored vegan gelatin powder
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup unsalted butter, softened (for frosting)
  • 1/4 cup heavy cream or whole milk
  • 2 teaspoons pure vanilla extract (for frosting)
  • 1/8 teaspoon fine sea salt (for frosting)
  • 4 cups confectioners' sugar, sifted
  • 12 Golden sandwich cookies, cream filling removed (or 1 ½ cups crushed shortbread cookies)
  • 1 cup freeze-dried strawberries, lightly crushed
  • 4 tablespoons unsalted butter, melted and cooled

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the egg whites and whole egg, mixing well after each addition. Gradually pour in the milk while mixing on low speed.
  4. Stir in the strawberry vegan gelatin powder and vanilla extract until fully combined.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mix into the wet ingredients until just combined.
  6. Pour the batter into your prepared baking pan. Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Let it cool completely before frosting.
  7. For the frosting, beat together softened butter and heavy cream until smooth. Gradually add in powdered sugar while mixing on low speed until well combined.
  8. Stir in vanilla extract and salt until fully incorporated.
  9. Once the cake is cooled, spread an even layer of frosting over the top of the cake.
  10. Mix crushed Golden sandwich cookies with freeze-dried strawberries in a bowl and sprinkle this mixture evenly over the frosted cake.
