  • ¾ cup (180mL) milk
  • ½ cup (113g) unsalted butter (melted)
  • 1 large egg
  • ½ teaspoon vanilla extract
  • the juice of half of a lemon (about 2 Tablespoons)
  • zest of one lemon
  • ¼ cup (50g) granulated sugar (for glaze)
  • the juice of half of a lemon (about 2 Tablespoons, for glaze)
  • 2 Tablespoons (30mL) warm water (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased loaf pan.
  2. In one bowl, whisk together flour, sugar, baking soda, and salt.
  3. In another bowl, mix milk, melted butter, egg, vanilla extract, lemon juice, and lemon zest until smooth.
  4. Combine wet and dry ingredients gently until just mixed; fold in chopped strawberries.
  5. Pour batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes before transferring to a wire rack.
  7. For the glaze: Mix granulated sugar with lemon juice and warm water; drizzle over cooled bread.
