  • 1 cup fresh strawberries

Instructions

  1. In a small saucepan over medium heat, combine sliced strawberries, sugar, lemon juice, and water. Cook for about 5-7 minutes until softened.
  2. Stir in the cornstarch mixture; cook for another minute until syrupy. Set aside to cool.
  3. In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, mix buttermilk, egg, melted butter, and vanilla extract.
  4. Combine wet and dry mixtures; gently fold in hulled diced strawberries. Let batter rest for about 10 minutes.
  5. Preheat a non-stick skillet over medium heat; pour about 1/4 cup batter per pancake and cook until bubbles form on the surface (about 2-3 minutes). Flip and cook until golden brown (another minute).
