Ingredients
- 1 lb. bow tie pasta (cooked)
- 3 cups baby spinach (chopped)
- 1 lb. strawberries (sliced)
- 3/4 cup raspberry vinegar (or cider)
- 3 tablespoons honey
- 3 teaspoons extra virgin olive oil
- 3 teaspoons cornstarch
- 1½ teaspoon salt
- 3/4 teaspoon onion powder
- 3/4 teaspoon mustard powder
- 3 teaspoons poppy seeds
Instructions
- Cook pasta in salted boiling water until al dente. Drain and cool.
- In a small saucepan, whisk together vinegar, honey, olive oil, cornstarch, salt, onion powder, mustard powder, and poppy seeds. Heat until thickened.
- In a large bowl, combine cooled pasta, spinach, and strawberries. Drizzle with dressing and toss gently until mixed.
