  • 3 cups baby spinach (chopped)
  • 1 lb. strawberries (sliced)
  • 3/4 cup raspberry vinegar (or cider)
  • 3 tablespoons honey
  • 3 teaspoons extra virgin olive oil
  • 3 teaspoons cornstarch
  • 1½ teaspoon salt
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon mustard powder
  • 3 teaspoons poppy seeds

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and cool.
  2. In a small saucepan, whisk together vinegar, honey, olive oil, cornstarch, salt, onion powder, mustard powder, and poppy seeds. Heat until thickened.
  3. In a large bowl, combine cooled pasta, spinach, and strawberries. Drizzle with dressing and toss gently until mixed.
