  • 1 box strawberry cake mix
  • 4 eggs
  • 1 1/3 cup water
  • 2/3 cup vegetable oil
  • 3 oz box of strawberry Jello
  • 1 stick unsalted butter (softened)
  • 7.5 oz vegan marshmallows fluff
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 4 tbsp heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your bundt pan with non-stick spray.
  2. In a large bowl, mix together strawberry cake mix, eggs, water, vegetable oil, and strawberry Jello until well combined.
  3. Pour the batter into the prepared bundt pan and bake for 35-40 minutes or until a toothpick comes out clean.
  4. Let the cake cool in the pan for 10 minutes before transferring it to a cooling rack.
  5. For the cream filling, beat softened butter, vegan marshmallow fluff, powdered sugar, and vanilla extract in a bowl. Gradually add whipping cream until smooth.
  6. Create holes in the bottom of the cooled bundt cake and fill them with the cream mixture using a piping bag.
