  • 2 pounds boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • ½ cup low-sodium soy sauce
  • ½ cup brown sugar
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1 bell pepper, sliced (red or green)
  • ½ onion, sliced

Instructions

  1. Prepare the crockpot by lightly spraying it with cooking spray.
  2. Layer the boneless chicken breasts at the bottom of the crockpot.
  3. Scatter pineapple chunks over the chicken.
  4. In a mixing bowl, combine soy sauce, brown sugar, ketchup, minced garlic, and ground ginger. Mix well.
  5. Pour the sauce mixture over the chicken and pineapple in the crockpot.
  6. Add sliced bell pepper and onion on top.
  7. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours until the chicken is tender and shreds easily.
  8. If desired, thicken the sauce during the last 30 minutes by stirring in a cornstarch-water mixture.
  9. Shred the chicken with two forks right in the crockpot for better flavor absorption.
