  • 2 packs (14.1 oz) artesian flatbread
  • 5 tablespoons pesto
  • 1 cup fresh mozzarella (sliced)
  • 4 roma tomatoes (diced)
  • 1/4 cup basil leaves (sliced)
  • 2 cloves garlic (minced)
  • 1/4 cup parmesan cheese (grated)
  • 1/2 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • Salt (to taste)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with aluminum foil.
  2. In a mixing bowl, combine diced roma tomatoes, sliced basil, minced garlic, grated parmesan cheese, balsamic vinegar, olive oil, and salt. Stir well and set aside.
  3. Place one pack of flatbread on the prepared baking sheet and spread about 2.5 tablespoons of pesto evenly over it. Lay slices of mozzarella on top.
  4. Bake for approximately 10 minutes until the cheese is melted and bubbly.
  5. Transfer the baked flatbread to a cooling rack for a few minutes before generously topping with the bruschetta mixture.
  6. Drizzle with balsamic glaze and sprinkle additional basil and parmesan before serving immediately.
