Ingredients
- 1 teaspoon olive oil
- 10 oz Spiralized zucchini
- 1/3 cup Green Goddess Salad Dressing
- 1/4 cup chopped tomatoes
- 1/4 cup chopped olives
- 1/3 cup chopped feta cheese
- 1 teaspoon basil
- salt and pepper to taste
- 1 avocado peeled and sliced
Instructions
- Prepare the zucchini noodles by placing them on paper towels, sprinkling with salt, and letting them sweat for 30 minutes. Squeeze out excess water.
- In a skillet over medium-high heat, add olive oil and sauté the zucchini noodles for 3-4 minutes until slightly soft. Remove from heat and transfer to a large mixing bowl.
- Combine the remaining ingredients (except avocado) in the bowl with the zucchini noodles; mix gently.
- Chill in the refrigerator for at least one hour before serving. Top with sliced avocado just before serving.
