Ingredients

  • 1 teaspoon olive oil
  • 10 oz Spiralized zucchini
  • 1/3 cup Green Goddess Salad Dressing
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped olives
  • 1/3 cup chopped feta cheese
  • 1 teaspoon basil
  • salt and pepper to taste
  • 1 avocado peeled and sliced

Instructions

  1. Prepare the zucchini noodles by placing them on paper towels, sprinkling with salt, and letting them sweat for 30 minutes. Squeeze out excess water.
  2. In a skillet over medium-high heat, add olive oil and sauté the zucchini noodles for 3-4 minutes until slightly soft. Remove from heat and transfer to a large mixing bowl.
  3. Combine the remaining ingredients (except avocado) in the bowl with the zucchini noodles; mix gently.
  4. Chill in the refrigerator for at least one hour before serving. Top with sliced avocado just before serving.
